Wolves have the most variety in both appearance and sound. The 7 wolf sound variants (angry, big, classic, cute, grumpy, pugly, sad) give each wolf a distinct personality through audio alone, a feature that goes beyond simple texture swaps.
To tame all 9 wolf variants you need to visit 9 different biome types. The Pale wolf (the classic look) spawns in taiga biomes. The Ashen wolf spawns in snowy taiga. The Snowy wolf spawns in groves. Plan your exploration route to hit all biomes efficiently, since the "Adventuring Time" advancement and wolf collecting go hand in hand.
The all-black cat variant has a unique spawn condition: it only appears near witch hut structures in swamp biomes. This makes it one of the harder cat variants to find. The other 10 cat variants spawn based on general biome conditions or as default fallbacks.
Since variants are data-driven, you can modify spawn conditions in a datapack. Want all wolves to be the snowy variant everywhere? Override the wolf variant file and set the snowy variant's priority to 0 with no biome condition. You can also add entirely new variants with custom textures via resource packs.
